Fried black sausage with peppers

- Crisped black sausage
- 8 slices of semi-defrosted ciabatta bread
- 4 tablespoons of creamed morcilla (skinless morcilla and meat broth, blended together)
- 4 tablespoons of angel hair
- 4 tablespoons of creamed onion and star anise (sautéed onion, breadcrumbs, infused star anise, blended together)
Method
Morcilla de Burgos is made with intestines, blood, lard, onion, rice and salt.
How to fry morcilla de Burgos
Slice it into 1.5-2cm thick rounds and fry in plenty of hot oil (at least up to half the thickness of the morcilla).
Once it looks crispy, place it on a piece of kitchen paper.
Serve it with red or green peppers, either roasted or sautéed with Castrojeriz garlic.
Morcilla on toasted bread
Red pepper marmalade (roasted sweet peppers sautéed with sugar, and later gelatinised with gelatine sheets)
Put together a snack with bread spread with creamed morcilla and fry in plenty of olive oil.
Then top it with the marmalade, angel hair and creamed onion.
