Castilian soup

Ingredients

Ingredients for 4 people

  • Loaf of bread (crust and some breadcrumbs)
  • 2 cloves of garlic
  • 50g of cured ham
  • 50g of smoked pancetta
  • 1 tablespoon of sweet paprika
  • Black pepper
  • 6-8 tablespoons of olive oil
  • Eggs
  • Salt
  • Chilli

Method

Heat oil in a pot and add the following in the order listed: garlic, ham, pancetta, bread and then the sweet paprika. Add the water and leave to boil for 10 minutes, then season with salt, pepper and chilli.

Serve in an earthenware pot with a poached egg or an egg yolk cooked to your preference.

Mushroom soup with bread and raisins

Ingredients for 4 people

  • Raisin bread or 120g of ciabatta bread and 40g of raisins
  • 250g mushrooms (field mushroom, carrerilla mushroom, boletus mushroom, etc.) sautéed with olive oil and garlic
  • Sweet paprika (a pinch)
  • White pepper
  • Salt
  • 4 tablespoons of meat stock

Fry the bread with olive oil, then add the chopped raisins, sautéed mushrooms and the sweet paprika.

Then add the meat stock, water, more salt and pepper to taste. Leave to boil for 15 minutes.

Serve accompanied by 1 poached quail’s egg and some finely diced Iberian ham.
